Lap Cheong carbonara is a Chinese Fusion recipe that combines the sweet-savory rose-wine umami flavor from the Cantonese Lap Cheong Sausage with the creaminess of the much loved Carbonara.


With all the kids now eating a lot more variety of cuisines, especially the western dishes, my daughter loves making this for her Bible Study friends when they come over. And in her recipe, she adds a little cheeky twist: adding a little bit of Mozzarella cheese for fun. It is always a winner. So here's how we cook it.

List of Ingredients:

  1. Spaghetti, (200g)
  2. Lap Cheong (Chinese sausage), (100g, sliced)
  3. Eggs, (2 large)
  4. Parmesan cheese, (50g, grated)
  5. Mozzarella cheese, (30g, shredded)
  6. Black pepper, (to taste)
  7. Olive oil, (1 tablespoon)
  8. Garlic, (1 clove, minced)
  9. Fresh parsley, (for garnish)


Steps:

  1. Cook spaghetti in boiling salted water according to package instructions until al dente; reserve ½ cup of pasta water and drain.
  2. In a skillet, heat olive oil over medium heat and sauté minced garlic and sliced Lap Cheong until fragrant and slightly crispy.
  3. In a bowl, whisk together eggs, grated Parmesan, Mozzarella, and black pepper.
  4. Add the drained spaghetti to the skillet, removing from heat, and quickly toss with the egg mixture, adding reserved pasta water as needed for creaminess.
  5. Serve immediately, garnished with fresh parsley and additional Parmesan if desired.
